Green Goddess Salad

Here is a quick, simple recipe for a refreshing green goddess salad. Eat by itself or with your favorite pita chips.


1 Small Head of Cabbage

1 Cucumber

1 Jalapeno (optional if you like heat)

1/2 Cup Shredded Parmesan

For Dressing

1/4 Cup Olive Oil

1 Cup of Spinach

1 Tablespoon Lemon Juice

2 Garlic Cloves

1 Shallot

1/4 Cup Green Onion

1/4 Cup Almonds

Salt to taste

1 | Finely chop cabbage, cucumber and jalapeno and put in a bowl. Set aside.

2 | In a blender or food processor add all the dressing ingredients. Make sure all ingredients are well blended. Add more Olive Oil if the dressing is not the thickness desired. 3 | When the dressing in completely mixed, add to the bowl of vegetables.

4 | Your salad is ready to be enjoyed!
